How to make a perfect portuguese Shellfish Rice?
Portugal has always been known for its cuisine and the several different flavours and dishes you can find when travelling all over the country. From the mountains in the north to the rolling hills and plains of the south, Portugal offers a wide range of culinary delights, under the influence of Mediterranean and also its former colonial possessions.
At Good Morning Hostel, we aim to provide our guests, several bits of our culture, and the best our country has to offer in various aspects, including our tasty food.
Our “Moustache Cooking Classes” by chef João, are a great way to learn how to create perfect portuguese dishes and combinations, so that you can surprise all your friends back home. Today we teach you how to cook our great “Arroz de Marisco” (Shellfish rice), made out of the best ingredients provided by the Atlantic ocean.
Ingredients (4 to 6 people):
- 1 Onion
- 2 Garlic cloves
- Olive oil
- 1 Red pepper
- 1 Green pepper
- 1/2 Chili
- 4 Tomatoes
- 1 kg of Rice
- 1 kg of Sea Food (preferably fresh or those frozen mixes)
- 200gr of Parsley
- 1/2 cup of white wine
- 1/2 Lemon
Chop onion, garlic and tomatoes into small pieces. Heat the olive oil in a sauce pan and fry the onions until tender. Add garlic and continue to fry until onions get golden brown. Add chili, tomatoes and wine, simmer for about 5 minutes and let it reduce. Add the rice and water, cover the pan and simmer gently for about 10 minutes, until the rice is nearly cooked. Add the sea food and both peppers shopped in very small pieces. Cook for another 5 minutes until it’s done. Season with salt and parsley and serve it while hot. Tastes amazing with a little bit of lemon juice.
